Hard Candy Production Traits of Automatic Line

Production characteristics of hard candies on the fully automatic candy production line

The basic material for making hard candies on the fully automatic candy production line is granulated sugar, which accounts for 60% - 75% of the hard candies. What needs to be solved in hard candy manufacturing is how to turn crystalline granulated sugar into an amorphous solid. After granulated sugar is dissolved in water and changes from a crystalline state to an amorphous state, it needs to go through dehydration and concentration. When a pure granulated sugar solution is finally obtained after dehydration and concentration, it is still a crystal. In order to obtain an amorphous, non - crystalline substance, it is necessary to add a certain substance that can inhibit crystallization. This substance can increase the solubility of the granulated sugar solution, so that the granulated sugar solution does not crystallize when it is supersaturated. On the other hand, by increasing the viscosity of the sugar solution, the molecular movement of the granulated sugar solution rearranging into a crystalline form can also be slowed down.
The physical and chemical properties of hard candies:
The hard candies on the fully automatic candy production line belong to an amorphous structure and have no fixed melting point. They gradually melt into a semi - solid plastic sugar mass above 70°C, gradually turn into a sugar paste with a relatively high viscosity above 100°C, and transform into a liquid with high fluidity above 150°C. The main component of the sugar is crystalline sucrose. Moisture is a distinct sign that differentiates hard candies from other types of candies and is the main reason for the hardness and brittleness of hard candies. A low moisture content indicates a high dry matter content and a high sugar concentration in hard candies. To produce qualified hard candies, it is advisable to control the moisture content below 2%. Otherwise, the resulting hard candies will have poor transparency of the sugar mass. Due to high moisture content, they are neither hard nor brittle and are prone to graining within the shelf - life.
The factors affecting the equilibrium relative humidity of candies on the fully automatic candy production line are:
- The percentages of crystalline sucrose, non-crystalline sugar, and moisture in the basic composition of candy.
- The presence of substances other than sugars (such as acids, salts, etc.).
- The relative molecular masses of various soluble dry solids.
